It’s a constant breakfast predicament I find myself in on a weekly basis. Avocado? Bacon? Avocado. or maybe bacon… Arg.

BACON

The key to having this down to absolute perfection is all in crisping it up just so, and making sure you get the very best bacon (I go for smoked dry cure back bacon)

Oh and the last thing? A dribble of maple syrup. Mmmmmmmm

Vs.

AVOCADO

If it’s perfectly and completely ripe, only then does this win. The mushiest delish guac with a squeeze of lime and a generous pinch of rock salt. Finished with some roasted cherry tomatoes drizzled with a wee drop of balsamic vinegar.

Top these on a rustic chunk of toasted sour dough, a lick of slightly salted butter plus the perfect scrambled eggs and you’ve got yourself a winner either way.
